Baked Potato Squash

Information

The Baked Potato Squash is a healthy and tasty alternative to a regular baked potato. Preparations for this squash are similar to any other squash you would make, cutting in half and cleaning out the seeds then baking in the squash in the oven. This squash can also be used as a substitute for potatoes.

Recipe Ideas

(Baked) Baked Potato Squash

Wash the squash with soap and water.

Halve squash and remove seeds.

Poke meat of squash with fork (Do not pierce skin of squash) This will alow seasonings to penetrate the squash flesh better.

Lay squash face-up (flesh sides up) on a baking sheet and add one tablespoon of olive oil and butter to each half. Brush all over the squash flesh.

Season with thyme, sage, rosemary, minced garlic, salt, and pepper.

Cover tops of squash with aluminum foil to help seal in the seasonings.

Bake at 400 Degrees for 45 minutes, removing after 25-30 minutes to spread butter and oil over all of the flesh so the seasonings spread evenly.
